When the weather turning cooler, SOUP has been on my mind.  I’m not kidding, I could eat soup every day during the fall/winter.  There is something so comforting about a warm bowl of soup, and it’s an excellent source of protein and veggies.  Okay, maybe this one is a little short on the veggies but it is still nutritious and will fill you up!

{ HEALTHY WHITE CHICKEN CHILI  – 21 DAY FIX APPROVED }

Ingredients
6 C. Reduced Sodium Chicken Broth
3-4 C. Cooked and Shredded Boneless Skinless Chicken Breast (1 1/2 lb.)
2 (15 Oz.) Cans White Beans, drained and rinsed
2 C. Salsa Verde
2 Tsp. Cumin
Salt & Pepper to Taste
1 medium onion

Optional Toppings: Cilantro, Green Onions, Tortilla Chips, Avocado, Shredded/Crumbled Cheese, Greek Yogurt, hot sauce.

Directions

Toss all ingredients together into a medium stock pot and heat over medium-high heat until boiling; cover and reduce heat to medium-low and simmer for at least 5 minutes. Top with desired garnishes.

Containers: appx. 1 protein, 1 yellow per serving, (veggies are so minimal, I don’t count them).
